Ingredients: 1 lb chicken breast, diced. 2 cans white beans, drained and rinsed. 1 onion, diced. 2 cloves garlic, minced. 1 can diced green chilies. 4 cups chicken broth. 1 teaspoon cumin. 1 teaspoon oregano. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 cup frozen corn kernels. 1/2 cup sour cream. 1/4 cup chopped fresh cilantro. 2 tablespoons lime juice.
Instructions: In a crock pot, combine chicken, white beans, onion, garlic, green chilies, chicken broth, cumin, oregano, chili powder, salt, and pepper. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are melded. Stir in corn, sour cream, cilantro, and lime juice. Cook for an additional 30 minutes. Serve hot, garnished with additional cilantro and a lime wedge if desired.
