You can eat it with tortilla chips or put it on tacos, burritos, or nachos.

Instructions: In a skillet over medium heat, cook the chorizo, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Add the chopped onion, minced garlic, and jalapeo pepper to the skillet with the chorizo. Cook until the vegetables are softened, about 3-4 minutes. Stir in the diced tomato and cook for another 2 minutes. Reduce the heat to low. Add the shredded Monterey Jack and cheddar cheeses, stirring until melted and well combined. Gradually stir in the half-and-half or heavy cream until the mixture is smooth and creamy. Cook for an additional 2-3 minutes, stirring occasionally. Ingredients: 1 large celeriac, peeled and cut into fries. 2 tbsp olive oil. Salt and pepper to taste. 1/4 cup vegan mayonnaise. 1 tbsp white miso paste. 1 tbsp lemon juice. 1 clove garlic, minced. 1 tsp maple syrup. 1 tsp sriracha sauce optional.
Instructions: Preheat oven to 425F 220C. In a large bowl, toss celeriac fries with olive oil, salt, and pepper until evenly coated. Spread fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until fries are golden and crispy. While fries are baking, prepare the creamy miso dip by whisking together vegan mayonnaise, miso paste, lemon juice, garlic, maple syrup, and sriracha sauce if using until smooth and creamy.
