These Healthy Vanilla Almond Snack Bars are reminiscent of KIND bars, offering a wholesome and simple treat packed with the goodness of almonds, oats, and natural sweetness. They are gluten-free and make for a perfect on-the-go snack or quick breakfast option.
Ingredients: 1 cup almonds, chopped. 1 cup gluten-free rolled oats. 1/2 cup almond butter. 1/4 cup honey or maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/4 teaspoon salt. Optional: 1/4 cup shredded coconut, toasted.
Instructions: Preheat the oven to 350F 175C. In a large bowl, mix together chopped almonds, rolled oats, almond butter, honey or maple syrup, melted coconut oil, vanilla extract, and salt until well combined. Press the mixture into a parchment-lined baking dish, ensuring it's evenly spread and compacted. Bake for 20-25 minutes, or until golden brown around the edges. Remove from the oven and let it cool completely before cutting into bars or squares. Optional: Sprinkle toasted shredded coconut over the top before baking for added flavor and texture.
