Lemon chicken linguine that is creamy and delicious is a quick and easy pasta dish that is great for busy weeknights. To make a satisfying meal, tender chicken slices are cooked in a creamy lemon sauce with garlic and Parmesan cheese. The sauce is then tossed with linguine pasta.
Ingredients: 8 oz linguine pasta. 2 chicken breasts, thinly sliced. 2 tablespoons olive oil. 3 cloves garlic, minced. 1 cup chicken broth. 1/2 cup heavy cream. 1/4 cup grated Parmesan cheese. 2 tablespoons fresh lemon juice. Zest of 1 lemon. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Cook linguine according to package instructions until al dente. Drain and set aside. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken slices and cook until golden brown and cooked through, about 4-5 minutes per side. Remove chicken from skillet and set aside. In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Pour in chicken broth, heavy cream, Parmesan cheese, lemon juice, and lemon zest. Stir well to combine and bring to a simmer. Reduce heat to low and return cooked chicken slices to the skillet. Simmer gently for 2-3 minutes until the sauce thickens slightly and chicken is heated through. Add cooked linguine to the skillet and toss until well coated with the creamy lemon sauce. Season with additional salt and pepper if needed. Garnish with chopped fresh parsley before serving. Serve hot and enjoy!
