Ingredients: 1.5 lbs ground beef. 1 cup breadcrumbs. 1/2 cup milk. 1/4 cup ketchup. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 tsp Worcestershire sauce. 1 tsp dried oregano. 1 tsp dried thyme. Salt and pepper to taste. 2 lbs potatoes, peeled and diced. 1 cup chicken broth. 1/2 cup butter. 1/2 cup milk. Salt and pepper for mashed potatoes.
Instructions: Put the onion, garlic, Worcestershire sauce, oregano, thyme, salt, and pepper in a large bowl. Add the breadcrumbs, milk, ketchup, and ground beef. Combine well. Spread the dough out on a piece of aluminum foil and shape it into a loaf. Make a sling out of foil to make it easy to put and take out the meatloaf from the Instant Pot. Put a trivet in the Instant Pot and add one cup of water. Use the foil sling to lower the meatloaf onto the trivet. Diced potatoes, chicken broth, butter, salt, and pepper should all be mixed together in a different bowl. Place a steamer basket on top of the meatloaf and add the potato mix on top of that. Place the lid on top of the Instant Pot and seal the vent. Cook for 25 minutes on high pressure. Do a quick pressure release when you're done. Carefully take the steamer basket and meatloaf out of the oven. Using milk, butter, salt, and pepper to taste, mash the potatoes in the Instant Pot.
