A colorful and healthy quinoa salad with a tangy pumpkin vinaigrette that is great for a meal that is both light and filling.
Ingredients: 1 cup quinoa, rinsed and cooked. 2 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, diced. 1/4 cup red onion, finely chopped. 1/4 cup feta cheese, crumbled. 1/4 cup pumpkin seeds, toasted. 1/4 cup olive oil. 2 tablespoons apple cider vinegar. 1 tablespoon honey. 1 teaspoon Dijon mustard. 1/2 teaspoon ground cumin. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. Salt and pepper to taste.
Instructions: In a large bowl, combine the cooked quinoa, mixed salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and toasted pumpkin seeds. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, ground cumin, paprika, cayenne pepper, salt, and pepper to create the spicy pumpkin vinaigrette. Pour the vinaigrette over the quinoa salad and toss gently to coat all ingredients evenly.
