This Cauliflower Rice Burrito Bowl is a nutritious and flavorful meal packed with fiber and protein. Using cauliflower rice instead of traditional rice reduces the carb content while adding extra veggies to your diet. It's quick to make and perfect for a healthy weeknight dinner or meal prep.
Ingredients: 1 head cauliflower, grated into rice-like texture. 1 can black beans, drained and rinsed. 1 cup corn kernels, fresh or frozen. 1 avocado, diced. 1 tomato, diced. 1/4 cup red onion, finely chopped. 1/4 cup cilantro, chopped. 1 lime, juiced. 1 tsp cumin. 1 tsp chili powder. Salt and pepper to taste.
Instructions: Saut cauliflower rice in a large skillet for about 5 to 7 minutes, or until it's soft. Put corn, cumin, chili powder, salt, and pepper in the pan with the black beans. Stir every now and then for another 5 minutes. Take the dish off the heat and fill the burrito bowls by dividing the cauliflower rice mixture among serving bowls. Add tomato, red onion, cilantro, and diced avocado on top. Before you serve, drizzle lime juice over the bowls. Have fun!
