Ingredients: 2 cups quick-cooking oats. 1/2 cup unsalted butter. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1/2 cup milk. 1/4 cup caramel sauce. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 3 cups dry crispy rice cereal.
Instructions: In a large mixing bowl, combine the quick-cooking oats and crispy rice cereal. Set aside. In a medium saucepan, melt the unsalted butter over medium heat. Stir in the granulated sugar, packed brown sugar, milk, caramel sauce, and salt. Bring the mixture to a boil, stirring constantly. Allow it to boil for 1-2 minutes, continuing to stir. Remove the saucepan from the heat and stir in the vanilla extract. Pour the caramel mixture over the oats and crispy rice cereal. Stir well to combine, making sure all dry ingredients are coated. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto wax paper or a parchment-lined baking sheet. Let the cookies cool and set at room temperature for about 30 minutes, or until firm.
