Instructions: Preheat oven to 350F 175C. In a small mixing bowl, cream together vegan butter, brown sugar, white sugar, and vanilla extract until smooth. Add flour, baking soda, and salt to the bowl. Mix until combined. Fold in chocolate chips. Divide dough into two equal parts. Press one part of the dough into a small disk. Place a few chocolate chips in the center and fold dough around them to form a ball. Repeat with the other part of the dough. Place both dough balls on a baking sheet lined with parchment paper. Flatten each dough ball slightly with the palm of your hand. Bake for 8-10 minutes, or until edges are lightly golden. Let cool for a few minutes before serving.
