Ingredients: 1 cup butter, melted. 2 cups graham cracker crumbs. 1 1/2 cups powdered sugar. 1 tablespoon ground ginger. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon salt. 3 eggs. 2 cups cream cheese, softened. 1 teaspoon vanilla extract. 1/2 cup molasses. 1/4 cup brown sugar. 1/4 cup all-purpose flour. Whipped cream and gingerbread cookie crumbs for topping.
Instructions: Preheat the oven to 350F 175C and grease a 9x13-inch baking pan. In a bowl, combine the melted butter and graham cracker crumbs. Press the mixture into the bottom of the prepared pan to form the crust. In another bowl, whisk together powdered sugar, ground ginger, ground cinnamon, ground nutmeg, and salt. Beat in 1 egg and 1/4 cup of softened cream cheese into the sugar-spice mixture. Pour this mixture over the graham cracker crust. In a separate bowl, beat together 2 eggs, remaining softened cream cheese, vanilla extract, molasses, brown sugar, and flour until well combined. Pour the molasses mixture over the first layer in the pan. Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center is slightly jiggly. The bars will firm up as they cool. Remove from the oven and let the bars cool completely in the pan on a wire rack. Once cooled, refrigerate the bars for a few hours or overnight to fully set.
