This Paleo-friendly recipe combines flavorful seasonings with a variety of vibrantly roasted vegetables. This nutrient-dense side dish will satisfy your palate and help you stick to your Paleo diet.
Ingredients: 2 cups of sweet potatoes, diced. 2 cups of broccoli florets. 2 cups of cauliflower florets. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 2 tablespoons of olive oil. 1 teaspoon of garlic powder. 1 teaspoon of onion powder. 1 teaspoon of paprika. Salt and pepper to taste.
Instructions: Preheat your oven to 400F 200C. In a large mixing bowl, combine sweet potatoes, broccoli, cauliflower, and bell peppers. Drizzle olive oil over the vegetables and toss to coat evenly. Sprinkle garlic powder, onion powder, paprika, salt, and pepper over the veggies, and toss again to distribute the seasonings. Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the veggies are tender and slightly crispy at the edges. Remove from the oven and let cool for a few minutes before serving.
