With these Asian-style zucchini noodles, you can make a quick and tasty low-carb Paleo meal. This dish is great for a healthy dinner or lunch because it is full of flavor and good for you nutrients.
Ingredients: 2 medium zucchinis, spiralized. 2 tablespoons coconut oil. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 2 tablespoons soy sauce or tamari. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1/4 teaspoon red pepper flakes optional. Sesame seeds, for garnish. Chopped green onions, for garnish.
Instructions: In a large skillet, heat coconut oil over medium-high heat. Add minced garlic and ginger, and cook for 1-2 minutes until fragrant. Add spiralized zucchini noodles to the skillet and saut for 3-4 minutes, until tender but still crisp. In a small bowl, mix together soy sauce or tamari, sesame oil, rice vinegar, and red pepper flakes if using. Pour the sauce over the zucchini noodles and toss to coat evenly. Cook for an additional 1-2 minutes until heated through. Remove from heat and garnish with sesame seeds and chopped green onions before serving.
