Almond flour and quinoa are used to make tasty and healthy pancakes that are great for a gluten-free breakfast or brunch.
Ingredients: 1 cup almond flour. 1/2 cup cooked quinoa. 2 eggs. 1/4 cup almond milk. 1 tablespoon honey. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract.
Instructions: Put almond flour, cooked quinoa, eggs, almond milk, honey, baking powder, salt, and vanilla extract in a bowl. Use a whisk to make things smooth and well mixed. Place a nonstick skillet over medium-low heat and lightly coat it with oil or cooking spray. For each pancake, put 1/4 cup of batter on the pan. Cook for two to three minutes, or until bubbles appear on top. Flip and cook for one to two more minutes, or until golden brown. Do it again with the rest of the batter. Warm it up and top it with your favorite things, like yogurt, fresh fruit, or maple syrup.
