okay so, I have a Story about a customer we had tonight
so this guy in a fancy denim cowboy shirt (a jirt, if you will) came in during our dinner rush and ordered two burritos. the girl (T) doing the hot station (beans and rice and meat) was like "okie dokie, what do you want on them?"
this guy goes "I want Everything on the burritos, except the corn, jalapeƱos, and cheese."
T pauses to check
"You want Everything?"
"Yes, all the meats, and then all the vegetables."
"So you want... the steak, and the chicken, and the white meat chicken, and the ground beef, and the pulled pork, and the tofu?"
"What's tofu?"
"A soybean protein, comes in spongy blocks."

T turns to me. "Can we... can we do that?"
I slap on my manager tone of voice. "Sir, each extra scoop is going to be about $2.09-2.59 each, is that okay?"

I donāt want to endĀ Amazon, because it provides an incredibly useful service to the disabled community, the elderly, and those who simply donāt have time to go shopping due to working three jobs and the like. There currently isnāt a major alternative on the market that is the same level of cheap and accessible.
What I doĀ want to do is enforce some goddamn antitrust laws on major web-based companies like Amazon and Google and Facebook, and roll back their attempts at monopolizing entire industries, and make them pay their lowest-rung workers a fair wage and stop running their warehouses like a scene from a dystopian nightmare.
Your professor will not be happy with you if he says the Stanford Prison Experiment shows human nature and you say it shows the nature of white middle class college-aged boys.
Like he will not be happy at all.
For real though. That experiment. Scary shit.
This reminds me of a discussion that I read once which said Lord of the Flies would have turned out a hell of a lot differently if it was a private school of young girls (who are expected to be responsible and selfless instead), or a public school where the children werenāt all from an inherently entitled, emotionally stunted social class (studies have shown that people in lower socioeconomic classes show more compassion for others). Or that the same premise with children raised in a different culture than the toxic and opressive British Empire and itās emphasis on social hierarchy and personal wealth and status. And that what we perceive as the unchangable truth deep inside humanity because of things like Lord of the Flies and the Stanford Prison Experiment, is just the base truths about what happens when you remove any accountabilty controlling one social group with an overwhelming sense of entitlement and an inability to feel compassion.

I just wanna say that the Lord of the Flies was explicitly written about high-class private school boys to make this exact point. Golding wrote Lord of the Flies partially to refute an earlier novel about this same subject: The Coral Island by R.M. Ballantyne. Golding thought it was absolutely absurd that a bunch of privileged little shits would set up some sort of utopia, so his book shows them NOT doing that.
This is also generally true about most psychological experiments.
Thereās an experiment calledĀ āThe Ultimatum Gameā. It goes something like this.
Subject A is given an amount of money (Say, $100).
Subject A must offer Subject B some percentage of that money.
If Subject B accepts Subject Aās offer, both get the agreed upon amount of money. If Subject B refuses, no one gets any money.
The most common result was believed to be that people favored 50/50 splits. Anything too low was rejected; people wanted fairness. This was believed to be universal.
And then a researcher went to Peru to do the experiment with members of the indigenous Machiguenga population, and was baffled to find that the results were totally different.
Because, to the Machiguenga, refusing any amount of free money (even an unfair amount) was considered crazy.
So the researcher took his work on the road (to 14 other āsmall scaleā societies and tribes) , and to his shock found the results varied wildly depending on where the test was done.Ā
In fact, theĀ āuniversalā result? Was an outlier.Ā
And thatās the problem. 96% percent of test subjects for psychological research come from 12% of the population. Stuff that we consider to be universal facts of human nature⦠even things like optical illusions, just⦠arenāt.

Um no wtf. Some people have pre-existing conditions that make it difficult to breathe with a mask on. E.g. anxiety, asthma, COPD. Mind your own business.
Actually I have anxiety, claustrophobia, sensory issues, & severe asthma, yet I still wear at least one if not two masks in public.

Also asthmatics and other high risk people should wear masks to protect ourselves if we can? Having a few asthma attacks or panic attacks is so much better than me or someone else dying from covid19.

yeast recipe: mix flour and water into a somewhat liquid. cover, leave on counter. Every day, add a spoonful of flour to the mix, occasionally water if it gets too thick. When the mixture begins to bubble, yeast is active. Keep in fridge, use as much as you need in recipe, literally the yeast left on the edges of the container are enough to make more yeast. Keep feeding it every day :)

The wild yeast found in flour and in the air of your home can be cultivated by just.... leaving wet flour paste and a sprinkle of sugar out as free real estate.
Yeast moves in, you feed it a bit more every day, and thatās a bread starter!
Mine is about two months old and going strong. Some bakeries pride themselves in having bread starters over a century old. The wild yeast gives bread a complexity and depth of flavor that gives sourdough itās iconic flavor.

When the yeast is hungry it starts to smell like wine or acetone.
When itās eating well and happy, it smells like vinegar and fresh bread.
Keeping it cold slows its metabolism, so you can put it in the fridge if you donāt make bread every day.
In the fridge you only have to feed it every 2 days or so. Left out at room temperature, you have to feed, and take a piece off for baking every day.
Yeast is killed at temps over 85 degrees Fahrenheit, but it can withstand short periods of being frozen, so the cold fridge is fine.
As long as you have flour on-hand, itās basically infinite ready-to-bake bread.

Dumplings (rolled dough flat and stuffed with minced veggies)
Bread loaves (duh)
Fried dough balls
Elephant ears (that cinnamon-sugar ā¤ļø)
