Enjoy these rich pumpkin brownies that don't need any flour and are keto, paleo, dairy-free, and nut-free! They taste like chocolate with a hint of pumpkin, and you can eat them without feeling bad about it.
Ingredients: 1 cup canned pumpkin puree. 1/2 cup unsweetened cocoa powder. 1/2 cup coconut sugar. 2 eggs. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt. Optional: sugar-free chocolate chips for topping.
Instructions: Preheat oven to 350F 175C and grease a baking dish. In a large bowl, mix together pumpkin puree, cocoa powder, coconut sugar, eggs, melted coconut oil, vanilla extract, baking soda, and salt until well combined. Pour the batter into the prepared baking dish and spread it evenly. Optional: Sprinkle sugar-free chocolate chips on top of the batter. Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs. Allow the brownies to cool completely before slicing into squares. Serve and enjoy!
