Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 cup cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup chocolate chips. 8 ounces cream cheese, softened. 1/4 cup granulated sugar. 1 large egg yolk.
Instructions: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Fold in the chocolate chips. For the cheesecake filling, beat together the softened cream cheese, granulated sugar, and egg yolk until smooth. Using a spoon or cookie scoop, drop spoonfuls of chocolate cookie dough onto a parchment-lined baking sheet. Make an indentation in the center of each cookie dough mound and fill it with a small amount of the cheesecake filling. Bake the cookies in a preheated oven at 350F 175C for about 10-12 minutes, or until the edges are set. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
