Ingredients: 2 large zucchinis, spiralized. 1 cup cherry tomatoes, halved. 1/2 cup red bell pepper, thinly sliced. 1/4 cup fresh basil leaves, chopped. 1/4 cup pine nuts. 2 tablespoons extra virgin olive oil. 2 tablespoons lemon juice. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: In a large bowl, combine spiralized zucchinis, cherry tomatoes, red bell pepper, and basil leaves. In a small skillet, toast pine nuts over medium heat until lightly browned, then add them to the bowl. In a small jar, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing. Pour the dressing over the pasta mixture and toss until well coated. Serve immediately, or refrigerate for a chilled pasta salad.
