This vegan take on broiled feta uses tofu to make it creamy and pairs it with garlicky cherry tomatoes and sour capers to give it a big flavor boost.
Ingredients: 1 block extra-firm tofu, drained and pressed. 1 tablespoon olive oil. 1 pint cherry tomatoes. 2 cloves garlic, minced. 2 tablespoons capers, drained. 1 tablespoon balsamic vinegar. Salt and pepper, to taste. Fresh basil leaves, for garnish.
Instructions: Preheat the broiler in your oven. Slice the tofu into thick slabs and place on a baking sheet lined with parchment paper. Brush both sides of the tofu slabs with olive oil and season with salt and pepper. In a bowl, toss the cherry tomatoes with minced garlic, capers, and balsamic vinegar. Spread the cherry tomato mixture around the tofu on the baking sheet. Place the baking sheet under the broiler and broil for 8-10 minutes, or until the tomatoes are blistered and the tofu is golden brown. Remove from the oven and garnish with fresh basil leaves. Serve immediately.
