Ingredients: 1 ripe mango, diced. 2 ripe avocados, diced. 1/2 red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup lime juice. 2 tablespoons olive oil. Salt and pepper to taste. Mixed greens for serving.
Instructions: In a large bowl, combine diced mango, diced avocado, finely chopped red onion, and chopped cilantro. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to make the dressing. Pour the dressing over the mango and avocado mixture, gently toss to coat all ingredients.
