This Peruvian-inspired grilled chicken is bursting with flavor from a zesty marinade and served with a creamy green sauce made with cilantro and jalapeno. It's a perfect dish for a barbecue or a weeknight dinner.
Ingredients: 4 chicken breasts. 1/4 cup soy sauce. 1/4 cup vinegar. 1/4 cup lime juice. 4 cloves garlic, minced. 1 tablespoon paprika. 1 teaspoon cumin. 1 teaspoon oregano. Salt and pepper to taste. 1/2 cup mayonnaise. 1/2 cup sour cream. 1 jalapeno pepper, seeded and chopped. 1 cup fresh cilantro. 2 tablespoons lime juice. 2 cloves garlic. Salt and pepper to taste.
Instructions: In a bowl, mix together soy sauce, vinegar, lime juice, minced garlic, paprika, cumin, oregano, salt, and pepper. Place chicken breasts in a large resealable plastic bag, pour marinade over the chicken, seal, and marinate in the refrigerator for at least 1 hour. Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade. Grill chicken until cooked through, about 6-8 minutes per side depending on thickness, or until internal temperature reaches 165F 75C. Meanwhile, prepare the creamy green sauce by blending mayonnaise, sour cream, jalapeno pepper, cilantro, lime juice, garlic, salt, and pepper until smooth. Serve grilled chicken with creamy green sauce on the side or drizzled over the top. Enjoy!
