This Cilantro Lime Quinoa Salad is a refreshing and healthy dish that's perfect for a light lunch or side dish. Packed with the flavors of fresh cilantro and zesty lime, it's vegan, gluten-free, and clean eating at its best.
Ingredients: 1 cup quinoa. 2 cups water. 1/2 cup fresh cilantro, chopped. 2 limes, juiced. 1 cup cherry tomatoes, halved. 1/2 red onion, finely chopped.
Instructions: Rinse the quinoa thoroughly in a fine-mesh strainer. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa to the boiling water, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove the cooked quinoa from heat and fluff it with a fork. Let it cool to room temperature. In a large bowl, combine the cooked quinoa, chopped cilantro, lime juice, halved cherry tomatoes, and finely chopped red onion. Toss everything together until well combined. Refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!
