Ingredients: 200g soba noodles. 2 tablespoons toasted sesame oil. 2 tablespoons white miso paste. 2 tablespoons rice vinegar. 1 tablespoon soy sauce. 1 tablespoon honey. 1 clove garlic, minced. 1 teaspoon grated ginger. 1 cup shredded carrots. 1 cup sliced cucumber. 1/2 cup sliced red bell pepper. 2 green onions, chopped. 2 tablespoons toasted sesame seeds. Fresh cilantro leaves for garnish.
Instructions: Cook the soba noodles according to package instructions. Drain and rinse with cold water, then set aside. In a small bowl, whisk together toasted sesame oil, white miso paste, rice vinegar, soy sauce, honey, minced garlic, and grated ginger to make the dressing. In a large mixing bowl, combine the cooked soba noodles, shredded carrots, sliced cucumber, sliced red bell pepper, and chopped green onions. Pour the dressing over the salad ingredients and toss until everything is well coated. Sprinkle toasted sesame seeds over the salad and garnish with fresh cilantro leaves.
