These Avocado Lime Hand Pies are a delicious paleo-friendly treat with a zesty twist. The creamy avocado filling paired with the tangy lime creates a delightful flavor combination. Perfect for a snack or dessert that fits into your autoimmune-friendly diet!
Ingredients: 2 ripe avocados, mashed. Zest and juice of 2 limes. 2 tablespoons honey. 1/4 cup coconut flour. 1/4 cup almond flour. 1/4 cup arrowroot starch. 1/4 teaspoon salt. 2 tablespoons coconut oil, melted. 1 egg, beaten for egg wash. Optional: sesame seeds for garnish.
Instructions: Set the oven temperature to 175C 350F. Melted coconut oil, lime zest, lime juice, honey, and mashed avocados should all be combined in a mixing bowl. Blend thoroughly. Combine the arrowroot starch, coconut flour, almond flour, and salt in a separate bowl. Stirring until a dough forms, gradually add the dry ingredient mixture to the avocado mixture. Form each of the six equal portions of dough into a ball. Roll a ball of dough, about 1/8-inch thick, into a circle between two pieces of parchment paper. Continue with the remaining pieces of dough. Top half of each dough circle with your preferred filling such as seasoned ground meat, veggies, or fruits. Using a fork, seal the edges of the semi-circle formed by folding the remaining dough over the filling. Drizzle the beaten egg over the top of every hand pie and garnish with the optional sesame seeds. The hand pies should be baked for 20 to 25 minutes, or until golden brown, on a baking sheet covered with parchment paper. Before serving, let the hand pies cool slightly.
