This vegan and gluten-free self-saucing banana pudding cake is a comforting and indulgent dessert that's easy to make. It features a moist banana cake topped with a rich chocolate sauce that forms as it bakes. Perfect for satisfying your sweet tooth while still being mindful of dietary preferences!
Ingredients: 1 cup gluten-free flour. 1/2 cup coconut sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 3 ripe bananas, mashed. 1/4 cup coconut oil, melted. 1/4 cup almond milk. 1 tsp vanilla extract. 1/4 cup cocoa powder. 3/4 cup boiling water.
Instructions: Warm the oven up to 175F 350C. Prepare a baking dish by greasing it. Gluten-free flour, coconut sugar, baking powder, baking soda, and salt should all be mixed together in a bowl. Melt the coconut oil and add it to the dry ingredients. Then add the almond milk and vanilla extract. Mix everything together well. Spread the batter out evenly in the baking dish that has been prepared. Mix the cocoa powder and the rest of the coconut sugar in a different bowl. Spread this mixture out over the batter in a thin layer. Carefully pour hot water over the chocolate and batter mix. After the oven is hot, bake the cake for 35 to 40 minutes, or until it is set and bounces back when lightly touched. Spoon the sauce from the bottom of the dish over each warm serving.
