This quick and tasty BBQ chicken thighs skillet dinner only takes one pan and is great for busy weeknights. It's a very satisfying dish to cook juicy chicken thighs with colorful bell peppers and onions and then cover them in tangy barbecue sauce.
Ingredients: 6 bone-in, skin-on chicken thighs. Salt and black pepper to taste. 1 tablespoon olive oil. 1/2 cup barbecue sauce. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, sliced. 1 teaspoon garlic powder. 1 teaspoon paprika. 1/2 teaspoon dried thyme. 1/2 teaspoon dried oregano. 1/4 teaspoon cayenne pepper optional. Fresh parsley for garnish optional.
Instructions: Get the oven ready by heating it up to 400F 200C. On both sides, season the chicken thighs with salt and pepper. A big skillet that can go in the oven should have olive oil in it. Put the chicken thighs in the pan with the skin side down. Cook for about 5 minutes on each side until they are golden brown. Take the chicken out of the pan and set it aside. Put sliced onion and bell peppers in the same pan. About 5 minutes of cooking will soften the food. It's time to add the cayenne pepper, thyme, oregano, paprika, and garlic powder. Bring the chicken thighs back to the pan and place them in the middle of the vegetables. Put barbecue sauce on the chicken thighs and brush it on. Place the skillet in an oven that has already been heated up. Bake for 20 to 25 minutes, or until the chicken is fully cooked and the juices run clear. If you want, you can add fresh parsley as a garnish before serving.
