Ingredients: 1 pie crust. 1 cup fresh spinach, chopped. 1/2 cup grated Parmesan cheese. 1/2 cup shredded mozzarella cheese. 4 large eggs. 1 cup milk. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon nutmeg. 1/4 teaspoon garlic powder.
Instructions: Preheat your oven to 375F 190C. Place the pie crust in a pie dish and set aside. In a skillet, saut the chopped spinach over medium heat until it wilts and most of the moisture has evaporated. Remove from heat and let it cool. In a bowl, whisk together the eggs, milk, salt, pepper, nutmeg, and garlic powder. Spread the sauted spinach evenly in the bottom of the pie crust. Sprinkle Parmesan and mozzarella cheese over the spinach. Pour the egg mixture over the spinach and cheese in the pie crust. Bake in the preheated oven for 35-40 minutes or until the quiche is set and the top is lightly browned. Remove from the oven and let it cool for a few minutes before serving.
