This recipe makes a tasty and filling meal with grilled steaks, bright chimichurri sauce, and smokey roasted peppers.
Ingredients: 4 beef steaks about 1 inch thick. Salt and black pepper to taste. 2 red bell peppers, halved and seeded. 2 green bell peppers, halved and seeded. 1/4 cup olive oil. 4 cloves garlic, minced. 1 cup fresh parsley, chopped. 1/4 cup fresh oregano leaves. 1/4 cup red wine vinegar. 1 teaspoon crushed red pepper flakes.
Instructions: Preheat grill to medium-high heat. Season steaks generously with salt and pepper. Place bell peppers on grill, skin side down, and cook until charred and tender, about 10-12 minutes. Remove from grill and set aside to cool slightly. In a small bowl, whisk together olive oil, garlic, parsley, oregano, vinegar, and red pepper flakes to make chimichurri sauce. Season with salt and pepper to taste. Grill steaks to desired doneness, about 4-5 minutes per side for medium-rare. Slice grilled peppers into strips. Serve grilled steaks topped with chimichurri sauce and accompanied by roasted pepper strips. Enjoy!
