Ingredients: 4 boneless, skinless chicken breasts. 1/2 cup ketchup. 1/4 cup soy sauce. 1/4 cup apple cider vinegar. 1/4 cup brown sugar. 1 tablespoon cornstarch. 1 teaspoon minced garlic. 1 teaspoon grated ginger. 1/2 teaspoon crushed red pepper flakes. Salt and pepper to taste. Sesame seeds and chopped green onions for garnish optional.
Instructions: Before you start cooking, heat the oven to 375F 190C. Mix ketchup, soy sauce, apple cider vinegar, brown sugar, cornstarch, ginger, garlic, and crushed red pepper flakes in a small saucepan. Stir the sauce all the time over medium-low heat for about 5 minutes, or until it gets thicker. Take it off the heat. Put the chicken breasts in a baking dish and season them with salt and pepper. Cover the chicken breasts with the sweet and sour sauce, making sure it covers them all. Put the baking dish in a hot oven and cover it with foil. Bake for 25 to 30 minutes, or until the chicken is fully cooked and the internal temperature reaches 165F 75C. Take off the foil and turn the oven on broil once the food is done. For an extra two to three minutes, or until the sauce starts to caramelize a bit, broil the chicken again. If you want, you can add sesame seeds and chopped green onions as a garnish. Enjoy while hot!
