Ingredients: 2 cups shredded coconut. 1/2 cup almond flour. 1/4 cup raspberry jam. 1/4 cup dark chocolate chips. 2 egg whites. 1/4 cup granulated sugar. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Preheat your oven to 325F 160C. In a bowl, combine the shredded coconut and almond flour. In a separate microwave-safe bowl, heat the raspberry jam and dark chocolate chips in 15-second increments until melted, stirring between each increment. Add the melted raspberry-chocolate mixture to the dry ingredients and mix well. In another bowl, beat the egg whites until they form stiff peaks. Gradually add the granulated sugar, vanilla extract, and salt to the beaten egg whites, continuing to beat until the mixture is glossy and forms stiff peaks again. Gently fold the egg white mixture into the coconut-raspberry-chocolate mixture until well combined. Using a cookie scoop or spoon, drop spoonfuls of the mixture onto a parchment-lined baking sheet, forming macaroon mounds. Bake in the preheated oven for 15-18 minutes, or until the macaroons turn golden brown around the edges. Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
