Ingredients: 1 cup unsalted butter. 8 ounces semisweet chocolate, chopped. 1 1/2 cups granulated sugar. 4 large eggs. 1 teaspoon vanilla extract. 3/4 cup all-purpose flour. 1/4 cup cocoa powder. 1/2 teaspoon salt. 1 cup heavy cream. 8 ounces bittersweet chocolate, chopped. 1 tablespoon granulated sugar. 1 teaspoon vanilla extract.
Instructions: Warm the oven up to 175F 350C. A 9x13-inch baking pan should be greased. Melt the butter and semisweet chocolate in a medium saucepan over low heat. Stir the mixture until it is smooth. Take it off the heat and let it cool down a bit. Mix the sugar, eggs, and vanilla in a large bowl with a whisk until everything is well mixed. When the chocolate is smooth, add it and mix it in with a whisk. Add the flour, cocoa powder, and salt, and stir just until everything is mixed together. Spread the batter out evenly in the pan that has been prepared. If you stick a toothpick into the middle and it comes out with wet crumbs, the cake is done. Set the pan of brownies on a wire rack and let them cool all the way down. To make the chocolate mousse topping, melt the bittersweet chocolate in a heatproof bowl set over a pan of simmering water. Stir the chocolate until it is smooth. Take it off the heat and let it cool down a bit. Mix heavy cream, sugar, and vanilla in a different bowl. Whip the mixture until stiff peaks form. Mix the whipped cream and melted chocolate together until they are well mixed. Once the brownies are cool, spread the chocolate mousse on top of them evenly. Put it in the fridge for at least two hours before you serve it. Cut it into squares and serve it cold. Have fun!
