There is a lot of flavor in these Cancun Grilled Chicken Tacos with Citrus Chile Marinade. The chicken has a tropical flavor from the zesty and spicy marinade. Each bite is like a fiesta for your taste buds. For the best taco night, add fresh vegetables, sour cream, and queso fresco on top.
Ingredients: 4 boneless chicken breasts. 1/4 cup orange juice. 1/4 cup lime juice. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. 8 small taco tortillas. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped fresh cilantro. 1/2 cup sour cream. 1/4 cup crumbled queso fresco. Lime wedges for garnish.
Instructions: Add the olive oil, minced garlic, cumin, chili powder, paprika, salt, and pepper to a bowl. Use a whisk to mix the ingredients together. Put the chicken breasts in a plastic bag that can be closed again and again, and pour the marinade over them. Put the bag in the fridge for at least 30 minutes, or overnight for the best results. Set your grill to medium-high heat and oil the grate so that food doesn't stick. Put the chicken on the grill for 6 to 8 minutes on each side, or until the internal temperature reaches 165F 74C and the chicken is fully cooked. After taking the chicken off the grill, let it rest for a few minutes. Then, cut it into thin strips. For about 30 seconds on each side, warm up the taco shells on the grill. To put the tacos together, cover each tortilla with a lot of grilled chicken strips. Shred lettuce, diced tomatoes, red onion, and fresh cilantro and put them on top. Pour sour cream over the toppings, and then top with crumbled queso fresco. Add lime wedges to the Cancun Grilled Chicken Tacos to make them look nice. Enjoy your tasty chicken tacos that were marinated in citrus and chile.
