This Chocolate Mocha Pumpkin Bundt Cake is the ideal combination of chocolate, mocha, and pumpkin flavors. It's a rich treat for any occasion, topped with a glaze of rich chocolate ganache.
Ingredients: 1 3/4 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsweetened cocoa powder. 2 tablespoons instant coffee granules. 1 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 1 cup canned pumpkin puree. 1 teaspoon vanilla extract. 1 cup buttermilk. 1/2 cup semi-sweet chocolate chips. 1/4 cup heavy cream. 1/4 cup unsalted butter. 1/2 cup powdered sugar. 1/4 cup unsweetened cocoa powder. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Set the oven temperature to 175C 350F. Grease and dust a pan for Bundt cakes. Mix the flour, cocoa powder, baking soda, baking powder, and instant coffee granules in a bowl. Beat the brown sugar, granulated sugar, and softened butter until fluffy and light in another large bowl. Beat thoroughly after each addition of egg. Add the eggs one at a time. Add the vanilla extract and pumpkin puree and stir. Buttermilk should be added to the wet ingredients and dry ingredients to the wet ingredients in turn, starting and ending with the dry mixture. Blend until barely combined. Add the semi-sweet chocolate chips and mix well. Smooth the top of the batter after pouring it into the prepared Bundt pan. Bake for 45 to 50 minutes in a preheated oven, or until a toothpick inserted in the center comes out clean. After letting the cake cool in the pan for ten minutes, take it out and place it on a wire rack to finish cooling. Heat the heavy cream and 1/4 cup unsalted butter in a saucepan over low heat until the butter melts and the mixture starts to simmer, to make the chocolate ganache glaze. Take off the heat. Add the cocoa powder, vanilla extract, powdered sugar, and salt and whisk until glossy and smooth. Pour the chocolate ganache over the Bundt cake that has cooled down, letting it run down the sides.
