These Key Lime Pie Ice Pops are a delightful frozen treat inspired by the classic dessert. Creamy and tangy with a crunchy graham cracker crust, they offer a refreshing twist on a beloved favorite.
Ingredients: 1 cup graham cracker crumbs. 4 tablespoons unsalted butter, melted. 1 can 14 ounces sweetened condensed milk. 1/2 cup freshly squeezed key lime juice. 1 tablespoon lime zest. 1 cup heavy cream. 1/4 cup powdered sugar. 1 teaspoon vanilla extract.
Instructions: Put graham cracker crumbs and melted butter in a bowl and mix them together well. Make a crust by pressing the mixture firmly into the bottom of the ice pop molds. Mix sweetened condensed milk, key lime juice, and lime zest in a different bowl using a whisk. Whip the heavy cream in a different bowl until soft peaks form. Add the powdered sugar and vanilla extract slowly while whipping the mixture until stiff peaks form. Fold the whipped cream mixture into the key lime mixture slowly until it is all mixed together. Cover the graham cracker crust with the mixture and pour it into the ice pop molds. Leave a little space at the top for the pops to expand. Put in the ice pop sticks and freeze until firm, at least 4 hours. Once the ice pops are frozen, carefully take them out of the molds and serve right away. Have fun!
