This Mediterranean-inspired hummus is a paleo-friendly and gluten-free alternative to traditional chickpea hummus. Cauliflower serves as the base, providing a creamy texture while tahini, olive oil, and spices add depth of flavor.
Ingredients: 2 cups cooked cauliflower florets. 1/4 cup tahini. 1/4 cup extra virgin olive oil. 2 cloves garlic, minced. Juice of 1 lemon. 1 tsp ground cumin. 1/2 tsp paprika. Sea salt and black pepper to taste.
Instructions: In a food processor, combine cooked cauliflower, tahini, olive oil, garlic, lemon juice, ground cumin, and paprika. Blend until smooth and creamy, scraping down the sides as needed. Season with sea salt and black pepper to taste, adjusting flavors as desired. Transfer the hummus to a serving bowl. Drizzle with additional olive oil and sprinkle with paprika, if desired, for garnish. Serve with vegetable sticks or paleo-friendly crackers.
