Indulge in these delightful Chicken Cordon Bleu Pillows – a twist on the classic dish, featuring tender chicken breasts stuffed with Swiss cheese and ham, then coated in crispy breadcrumbs. Perfect for a gourmet dinner at home!
Ingredients: 4 boneless, skinless chicken breasts. 8 slices Swiss cheese. 8 slices ham. 1 cup breadcrumbs. 1/2 cup grated Parmesan cheese. 2 eggs. 1/4 cup milk. Salt and pepper to taste. Toothpicks.
Instructions: Warm the oven up to 190C 375F. Press each chicken breast between two pieces of plastic wrap until it is 1/4-inch thick. Each chicken breast should have a slice of Swiss cheese and a slice of ham stacked on top of it. To make "pillows," roll up each chicken breast and secure it with a toothpick. In a small bowl, mix the Parmesan cheese and breadcrumbs. Mix milk, salt, and pepper into eggs in a different bowl. Coat each chicken pillow with the egg mixture, then cover it with the breadcrumb mixture and press it down gently to stick. Place the chicken pillows on a baking sheet that has been lined with parchment paper. Cook the chicken until it is golden brown and cooked all the way through. Take out the toothpicks before serving.
