Ingredients: 1 1/2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup coconut oil, melted. 3/4 cup brown sugar. 1/4 cup granulated sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1 cup vegan chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking soda, and salt. In a separate bowl, mix the melted coconut oil, brown sugar, and granulated sugar until well combined. Add the applesauce and vanilla extract to the wet mixture and mix until smooth. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the vegan chocolate chips.
