This refreshing chilled soup combines the earthy sweetness of beets with the creamy texture of tofu and yogurt. It's a perfect light and healthy dish for hot summer days.
Ingredients: 2 cups cooked beets, chopped. 1 cup silken tofu. 1/4 cup Greek yogurt. 2 cloves garlic, minced. 1 tablespoon fresh dill, chopped. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: Blend together cooked beets, Greek yogurt, silken tofu, minced garlic, chopped dill, and lemon juice in a blender. In order to achieve the desired consistency, add water as necessary and blend until smooth and creamy. Toss in the salt and pepper to taste, then blend once more to combine. Before serving, transfer the soup to a bowl or other container and let it cool in the fridge for at least half an hour. If desired, top with more fresh dill and serve chilled.
