Grilled Lamb and Red Onion Skewers are a tasty dish that will go well at your next barbecue. The lamb is marinated in a zesty mix of spices and then grilled until it's just right. The red onions give the skewers a sweet and smoky flavor.
Ingredients: 1 1/2 pounds boneless lamb shoulder, cut into 1-inch cubes. 2 large red onions, cut into 1-inch chunks. 2 tablespoons olive oil. 2 tablespoons fresh lemon juice. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. Salt and pepper to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: To make a marinade, put olive oil, lemon juice, minced garlic, cumin, coriander, salt, and pepper in a bowl. Cover the lamb cubes with the sauce and mix them around to cover them. For at least an hour, cover and put in the fridge. Warm up the grill over medium-high heat. Put the chunks of lamb and red onion that have been marinated on the soaked wooden skewers one after the other. For 8 to 10 minutes, turning the skewers every so often, grill until the lamb is cooked to your liking and the onions are soft and slightly charred. If you want, you can add fresh herbs to the top of the hot grilled lamb and red onion skewers.
