Fresh vegetables, olives, feta cheese, and a homemade tangy dressing make up this Greek salad. It is both refreshing and tasty. On a hot summer day, it's a great side dish or light meal.
Ingredients: 2 cups cherry tomatoes, halved. 1 cucumber, diced. 1 red onion, thinly sliced. 1 green bell pepper, diced. 1/2 cup Kalamata olives, pitted. 1/2 cup feta cheese, crumbled. 1/4 cup extra-virgin olive oil. 2 tablespoons red wine vinegar. 1 teaspoon dried oregano. Salt and black pepper to taste. Fresh basil leaves for garnish.
Instructions: In a large bowl, combine the cherry tomatoes, cucumber, red onion, green bell pepper, Kalamata olives, and feta cheese. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper. Pour the dressing over the salad and toss to coat the ingredients evenly. Garnish with fresh basil leaves. Serve immediately or refrigerate until ready to serve.
