These gluten-free donut macarons have the light texture of macarons and the fun flavor and look of donuts. They're great for a gluten-free treat that people will love!
Ingredients: 3/4 cup almond flour. 1 cup powdered sugar. 2 large egg whites, room temperature. 1/4 cup granulated sugar. 1/2 teaspoon vanilla extract. 1/4 teaspoon cream of tartar. 1/4 cup gluten-free sprinkles, for decoration. 1/2 cup gluten-free chocolate chips. 1 tablespoon coconut oil.
Instructions: Warm the oven up to 300F 150C. Put parchment paper on the bottom of a baking sheet. Put almond flour and powdered sugar into a food processor and pulse them a few times to mix them well. The texture should be fine. Beat egg whites in a big bowl until they foam up. Keep beating after adding the cream of tartar until soft peaks form. As you keep beating, slowly add the granulated sugar until stiff peaks form. Be careful not to deflate the egg whites as you slowly fold in the almond flour mixture and vanilla extract. The batter should be put into a piping bag with a round tip. Put macarons on a baking sheet that has been prepared by piping small circles on it. To get rid of any air bubbles, lightly tap the baking sheet on the counter. Gluten-free sprinkles should be put on top of each macaron. Leave the macarons out at room temperature for twenty to thirty minutes, or until a skin forms on top. When the oven is hot, bake the macarons for 15 to 18 minutes, or until they are set and can be easily taken off the parchment paper. From the oven, take them out and let them cool all the way on the baking sheet. Using 30-second bursts to stir, melt the chocolate chips and coconut oil in a bowl that can go in the microwave. After the macarons have cooled, dip them half way into the melted chocolate mixture and then put them back on the parchment paper. Wait until the chocolate is set before you serve it.
