This hearty lentil and vegetable soup is vegan and full of fiber, protein, and good for you foods. On cold days, it's the perfect meal to warm you up and keep you healthy.
Ingredients: 1 cup green lentils, rinsed. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 3 garlic cloves, minced. 1 can 14 oz diced tomatoes. 6 cups vegetable broth. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon turmeric. 1/2 teaspoon dried thyme. Salt and pepper, to taste. 2 cups chopped kale or spinach. Juice of 1 lemon.
Instructions: Put the onion, carrots, celery, and garlic in a big pot. Add a little water or broth and cook for about 5 minutes, until the vegetables are soft. Put in the vegetable broth, cumin, paprika, turmeric, thyme, salt, and pepper. Then add the diced tomatoes and lentils. Bring to a boil, then lower the heat and let it cook for 25 to 30 minutes, or until the lentils are soft. Add the chopped spinach or kale and lemon juice and mix well. For an extra 5 minutes, cook. Check the seasonings and make changes as needed. If you want, you can serve it hot and top it with fresh herbs.
