Thank you to @plantbasedrd for this amazing post I'm going to try to make it myself —— I forgot to set the type of produce I wanted for a recent @imperfectfoods box. 😅As a result I got a number of tomatillos. It was probably fate because tomatillos make the perfect salsa...and I was in the mood for salsa. 💃🏽 Tomatillo salsa is super easy to make and goes really well with empanadas. I have an empanada recipe on my blog with step by step instructions (link in bio). Only difference with this one is the lentil corn filling. Tomatillo Salsa 6 tomatillos, remove wrap and stem 1/2 small yellow onion 1 jalapeño pepper 4 cloves garlic 1/4 cup fresh cilantro with stems Juice of one lime 1 tsp oregano 1/4 tsp salt or to taste Preheat oven to 400F. Rinse skin of tomatillos really well to remove any stickiness. Place tomatillos, quarter onion, jalapeño, and 4 garlic cloves (I very lightly crushed it) on a lined baking sheet. Place in oven for 15 minutes. Allow ingredients to cool, remove our skin of onion and garlic then place all roasted ingredients in a food processor along with the remaining ingredients. Pulse all ingredients together until a nice chunky salsa forms. Set aside and place in fridge to set prior to serving. Lentil Corn Filling 1 cup brown lentils 2 cups vegetable broth 1 tbsp tomato paste 2 tsp sugar 1 tsp smoked paprika 1/2 tsp coriander 1 tsp garlic powder 1 bay leaf 1/2 tsp cumin seeds 2 tsp hot sauce of choice 1 tbsp creamy tahini 1 cup frozen fire roasted corn In a sauce pan over medium heat, add rinsed lentils, veggie broth, tomato paste, sugar, paprika, coriander, garlic powder, pinch of salt (optional), and cumin seed. Stir well and add bay leaf. Bring to a boil, then reduce to a low heat and cover lentils. Allow to cook for 15-20 minutes. After cooking you should have a small amount of liquid (about 1/4 cup) left of broth. Remove pan from heat and add tahini and hot sauce. Stir well, then add 1 cup frozen fire roasted corn and stir to combine and thaw. Use as desired.
