Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Once cooled, spread a spoonful of peanut butter on the bottom of one cookie and sandwich it with another cookie. Repeat with the remaining cookies.
