Ingredients: 2 large sweet potatoes, cut into wedges. 12 slices of nitrate-free bacon. 1 tablespoon olive oil. 1 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Chopped fresh cilantro for garnish optional.
Instructions: Preheat your oven to 400F 200C. In a bowl, toss the sweet potato wedges with olive oil, smoked paprika, cayenne pepper, salt, and pepper until well coated. Wrap each sweet potato wedge with a slice of bacon, securing it with a toothpick. Place the bacon-wrapped sweet potato wedges on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the bacon is crispy and the sweet potatoes are tender, turning them halfway through. While the wedges are baking, prepare the Chilli Lime Mayo by mixing 1/2 cup of paleo-friendly mayonnaise with the juice of 1 lime and a pinch of chili powder. Once the bacon-wrapped sweet potato wedges are done, remove them from the oven and let them cool slightly.
