Ingredients: 1 cup unsweetened cocoa powder. 2 cups granulated sugar. 1/2 cup vegetable oil. 4 large eggs. 2 teaspoons vanilla extract. 2 cups all-purpose flour. 2 teaspoons baking powder. 1/2 teaspoon salt. 1 cup powdered sugar for rolling.
Instructions: In a large bowl, whisk together cocoa powder, granulated sugar, and vegetable oil until well combined. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Cover the dough and refrigerate for at least 2 hours or until firm. Preheat the oven to 350F 175C and line baking sheets with parchment paper. Scoop tablespoon-sized portions of dough and roll into balls. Roll each dough ball in powdered sugar until fully coated. Place the coated dough balls on the prepared baking sheets, spacing them a few inches apart. Bake in the preheated oven for 10-12 minutes, or until the cookies have crinkled and set around the edges. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
