Ingredients: 2 cups gluten-free all-purpose flour. 1 1/2 cups grated carrots. 1 cup unsweetened applesauce. 1/2 cup coconut oil, melted. 1/2 cup maple syrup. 1/2 cup almond milk. 1/4 cup brown sugar. 2 tsp baking powder. 1 tsp baking soda. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/2 tsp salt. 1/2 cup chopped walnuts optional. 1/2 cup raisins optional. 1 tsp vanilla extract.
Instructions: Start by heating the oven to 350F 175C. Prepare a 9-inch round cake pan by greasing it and lining it with parchment paper. Grate the carrots and mix them with the applesauce, melted coconut oil, maple syrup, almond milk, and brown sugar in a large bowl. Combine well. Mix the baking soda, ground cinnamon, ground nutmeg, and salt in a different bowl using a whisk. Slowly add the dry ingredients to the wet ones and mix them together until they are well mixed. If you're using raisins and chopped walnuts, add them now. Then, add the vanilla extract and mix it in. As soon as the cake pan is ready, pour the cake batter into it and use a spatula to smooth the top. After the oven is hot, bake it for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean. Take the cake out of the oven and let it cool for ten minutes in the pan. Then, move it to a wire rack to cool all the way through. You can frost the cake with your favorite vegan cream cheese frosting or just sprinkle powdered sugar on top after it's cool.
