This quick and simple stir-fried tofu with veggies is full of protein and makes a filling and healthy dinner choice. It's very easy to make and very flavorful.
Ingredients: 1 block tofu, pressed and cubed. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 1 tablespoon olive oil. 1 bell pepper, sliced. 1 cup broccoli florets. 1 carrot, julienned. 1/2 cup snap peas. 3 cloves garlic, minced.
Instructions: In a bowl, mix tofu cubes with soy sauce and let marinate for 10 minutes. Heat olive oil in a large skillet over medium heat. Add tofu and cook until golden brown, about 5 minutes. Remove from skillet and set aside. In the same skillet, add sesame oil and garlic. Cook for 1 minute. Add bell pepper, broccoli, carrot, and snap peas. Stir fry for 5-7 minutes until veggies are tender-crisp. Return tofu to the skillet and toss everything together for 2 minutes. Serve hot and enjoy!

This recipe for homemade baked tofu provides a tasty and high-protein substitute for meat. The tofu gets a crispy outside and a tender inside from the marinade's savory and slightly sweet undertones.
Ingredients: 1 block tofu, pressed and drained. 2 tablespoons soy sauce. 1 tablespoon olive oil. 1 tablespoon maple syrup. 1 teaspoon garlic powder. 1/2 teaspoon smoked paprika. Salt and pepper to taste.
Instructions: Preheat the oven to 375F 190C. Cut the pressed tofu into cubes or slices. In a bowl, whisk together soy sauce, olive oil, maple syrup, garlic powder, smoked paprika, salt, and pepper. Add the tofu to the bowl and toss gently to coat evenly with the marinade. Arrange the tofu in a single layer on a baking sheet lined with parchment paper or lightly greased. Bake for 25-30 minutes, flipping halfway through, until the tofu is golden and slightly crispy. Serve hot and enjoy!
