Fill tender chicken breasts with tasty provolone cheese and fresh spinach, roll them up, and bake them until they're done. These pinwheels are full of flavor and look fancy, but they are also very simple to make.
Ingredients: 4 boneless, skinless chicken breasts. 4 slices provolone cheese. 1 cup fresh spinach leaves. 1 tablespoon olive oil. 1 teaspoon garlic powder. Salt and pepper to taste. Toothpicks.
Instructions: Preheat oven to 375F 190C. Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness. Season each chicken breast with garlic powder, salt, and pepper. Layer each chicken breast with a slice of provolone cheese and a handful of spinach leaves. Roll up each chicken breast tightly and secure with toothpicks. Heat olive oil in a skillet over medium-high heat. Brown each chicken roll on all sides, about 2 minutes per side. Transfer browned chicken rolls to a baking dish. Bake in the preheated oven for 20-25 minutes or until chicken is cooked through. Remove toothpicks before serving.
