Ingredients: 1 lb ground beef. 1 packet taco seasoning mix. 1 can 10 oz diced tomatoes with green chilies, undrained. 1 can 8 oz tomato sauce. 2 cups beef broth. 8 oz pasta such as penne or rotini. 1 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro optional. Salt and pepper to taste.
Instructions: Over medium heat, brown and crumble the ground beef in a large skillet. Get rid of extra fat. Season with taco mix, add diced tomatoes and green chilies, tomato sauce, and beef broth, and mix everything together. Bring to a low boil. Put the pasta in the pan and mix it around well. Cover and cook for 12 to 15 minutes, stirring every now and then, until the pasta is soft. Add cheddar cheese shreds to the pasta after it's done cooking. Leave it alone for a while to melt. If you want, you can add chopped cilantro as a garnish. Before you serve, add salt and pepper to taste.
