These Chicken Enchiladas with Pumpkin Sauce offer a delightful twist on traditional enchiladas, combining tender shredded chicken with a creamy pumpkin sauce spiced with cumin, chili powder, and garlic. The result is a comforting and flavorful dish perfect for any occasion.
Ingredients: 2 cups cooked shredded chicken breast. 8 small corn tortillas. 1 can 15 ounces pumpkin puree. 1 cup chicken broth. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste. 1 cup shredded cheese cheddar or Mexican blend. 1/4 cup chopped fresh cilantro optional, for garnish.
Instructions: Preheat the oven to 375F 190C. In a saucepan, combine the pumpkin puree, chicken broth, cumin, chili powder, garlic powder, salt, and pepper. Cook over medium heat until heated through and well combined, stirring occasionally, about 5 minutes. Spread a thin layer of the pumpkin sauce on the bottom of a baking dish. Warm the corn tortillas in a microwave or skillet to make them pliable. Place a portion of the shredded chicken in the center of each tortilla, roll it up, and place seam-side down in the baking dish. Pour the remaining pumpkin sauce over the enchiladas, spreading it evenly. Sprinkle the shredded cheese on top of the enchiladas. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly. Garnish with chopped fresh cilantro, if desired, before serving.
