Enjoy the deep flavors and crunchy goodness of a Rack of Pork with crackling that has been cooked just right. A herb rub adds flavor to this classic roast, which is then cooked to perfection and makes a great main dish for any meal.
Ingredients: 1 Rack of pork roast about 4-5 pounds. 2 tbsp Olive oil. 1 tbsp Dijon mustard. 1 tbsp Fresh rosemary, chopped. 1 tbsp Fresh thyme leaves. 2 tsp Garlic, minced. Salt and pepper To taste. 1 cup Chicken broth or white wine. 1/4 cup All-purpose flour for crackling. 1/2 cup Water for crackling. 1 tsp Salt for crackling.
Instructions: Before you start cooking, heat the oven to 450F 230C. To make a herb rub, put mustard, chopped rosemary, thyme, garlic, salt, and pepper in a small bowl. Mix the ingredients together. Use paper towels to dry the rack of pork roast. Use your hands to cover the pork evenly with the herb mixture. Put the pork on a roasting rack in a roasting pan so that the fat side is facing up. Put it in an oven that is already hot for 15 minutes to get the top brown. Turn down the oven temperature to 325F 165C, and roast for another two hours, or until the internal temperature reaches 145F 63C. Brush on chicken broth or white wine every so often. Just before the food is done cooking, make the crackling. To make a paste, mix flour, water, and salt together. Spread it on top of the crackling layer of pork. To make the crackling more crispy, raise the oven temperature to 450F 230C for the last 30 minutes. Take the pork out of the oven and let it rest for 15 minutes before carving. This will make sure the crackling is crispy and the pork reaches the right internal temperature. Cut the rack of pork roast into chops, and then put the crackling on top of each one. Ingredients: 1 lb ground beef. 1/2 lb bacon, cooked. 4 slices cheddar cheese. 4 hamburger buns. 1/4 cup mayonnaise. 2 tbsp ketchup. 1 tbsp yellow mustard. 1/2 cup lettuce, shredded. 1/2 cup tomato, sliced. 1/4 cup red onion, thinly sliced. Salt and pepper to taste.
Instructions: Set your grill or griddle on the stove to medium-high heat. Shape the ground beef into 4 burger patties that are all the same size. Add salt and pepper to each patty. Put the burger patties on the grill or griddle and cook them for four to five minutes on each side, or until they're done the way you like them. Spread mayonnaise on the bottom halves of the hamburger buns while the burgers are cooking. Put lettuce, tomato slices, and red onion slices on top of the mayonnaise. The last minute the burgers are cooking, put a slice of cheddar cheese on each one and let it melt. Put the burger patties that have been cooked on the buns that have been prepared. Each burger should have a piece of cooked bacon on it. Spread ketchup and yellow mustard on the top halves of the buns. Put the burgers together by putting the top bun on top of the bacon-covered patty. Serve your Lord Have Mercy Triple B Burger right away and enjoy it!

Ingredients: 1 lb white beans, canned and drained. 4 slices bacon, chopped. 1 onion, diced. 2 cloves garlic, minced. 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces. 1/2 lb pork sausage, sliced. 1 can 14 oz diced tomatoes. 1 cup chicken broth. 1 tsp thyme, dried. 1/2 tsp rosemary, dried. Salt and pepper to taste. 1 cup breadcrumbs. 2 tbsp parsley, chopped.
Instructions: In a large pot, cook bacon over medium heat until crispy. Remove and set aside. In the same pot, saut onion and garlic until softened. Add chicken and pork sausage, cooking until browned. Stir in diced tomatoes, chicken broth, thyme, rosemary, salt, and pepper. Add the drained white beans and cooked bacon. Mix well. Simmer on low heat for 20-25 minutes, allowing flavors to meld. In a separate pan, toast breadcrumbs until golden brown. Serve the cassoulet topped with toasted breadcrumbs and chopped parsley.
