These grilled chicken kabobs are a perfect summer dinner option. They're quick to make and bursting with flavor. The marinade adds a zesty touch to the tender chicken and veggies. Great for a weeknight meal or a barbecue with friends and family.
Ingredients: 1 lb chicken breast, cut into 1-inch pieces. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into chunks. 1 zucchini, sliced. 1/4 cup olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: Put olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a bowl. This will make a marinade. Put pieces of chicken, bell pepper, onion, and zucchini on the wet wooden skewers one after the other. Fill a small dish with water and pour the marinade over the skewers. Allow them to sit for 15 to 20 minutes. Warm up the grill over medium-high heat. For 10 to 12 minutes, flip the kabobs every so often, until the chicken is cooked all the way through and the vegetables are slightly charred.
