The sweet almond flavor of amaretto is mixed into these delicious crepes, which are served with a bright cranberry-raspberry sauce. Great for a special brunch or breakfast!
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1/4 teaspoon salt. 2 large eggs. 1 cup milk. 2 tablespoons amaretto liqueur. 2 tablespoons melted butter. 1/2 cup fresh cranberries. 1/2 cup fresh raspberries. 1/4 cup cranberry juice. 1/4 cup orange juice. 1/4 cup granulated sugar. 2 tablespoons amaretto liqueur. Whipped cream for topping. Sliced almonds for garnish. Fresh mint leaves for garnish.
Instructions: In a blender, combine flour, sugar, salt, eggs, milk, 2 tablespoons amaretto liqueur, and melted butter. Blend until smooth. Let the batter rest for 30 minutes. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease it with butter or non-stick cooking spray. Pour 1/4 cup of the crepe batter into the heated skillet, swirling to spread it evenly. Cook for about 1-2 minutes until the edges start to lift and the crepe is lightly browned underneath. Flip the crepe and cook for an additional 1-2 minutes until the other side is golden. Repeat with the remaining batter, stacking the cooked crepes on a plate. In a saucepan, combine fresh cranberries, raspberries, cranberry juice, orange juice, and 1/4 cup granulated sugar. Cook over medium heat, stirring occasionally, until the berries burst and the sauce thickens about 10 minutes. Stir in 2 tablespoons of amaretto liqueur into the cranberry-raspberry sauce. Remove from heat. To serve, place a crepe on a plate, spoon some of the cranberry-raspberry sauce in the center, fold the crepe in half, and then fold it in half again to form a triangle.
